Chili-Lime Shrimp Tacos with lime-cilantro red cabbage slaw, smoked salsa verde, Mexican crema and queso fresco on a homemade tortilla de nopal.

Ingredients

Tortilla de Nopal
1 Medium nopal pad, needles removed
1 Cup Water
1/3 Cup Cilantro
2 Cups Masa Harina
¼ TBS Salt

Chili-Lime Shrimp
Ingredients:
1 lb Large Shrimp
1 Teaspoon Chili Powder
1 Teaspoon Chipotle Powder
½ Teaspoon Onion Powder
½ Teaspoon Garlic Powder
½ Teaspoon Cayenne Pepper
1 Teaspoon Kosher Salt
3 TBS Olive Oil
Juice of 2 Limes

Smoked Salsa Verde
Ingredients
1 1/2 lb tomatillos grilled/roasted
1 medium white onion
3 cloves garlic
1 bunch cilantro
Juice from 2 limes
2 Jalapeño peppers (or less based on your preference for spice)
Salt to taste

Directions

Tortilla de Nopal
Prep Time: 35 minutes
Cook Time: 20 minutes
Ingredients:
1 Medium nopal pad, needles removed
1 Cup Water
1/3 Cup Cilantro
2 Cups Masa Harina
¼ TBS Salt

 

Chili-Lime Shrimp
7. Marinate for 30 minutes.
8. Heat grill to high.
9. Grill shrimp 2-3 minutes/side until cooked through.

Cabbage Slaw
10. Combine the following in a bowl:
1 Cup Shredded Red Cabbage
½ Cup Shredded Carrots
2 Tablespoons Lime Juice
1 Tablespoon Olive Oil
¼ Cup Chopped Cilantro
Salt and Pepper to Taste

Smoked Salsa Verde
11. Add ingredients to a blender and blend to desired consistency.
Let cool in fridge.

12. Assemble shrimp tacos with warmed tortilla de nopal, top with shrimp, cilantro-lime slaw, smoked salsa verde, Mexican crema, and queso fresco.
