Yogurt Curry Chicken & Veggie Kabobs



1 cup Greek-style plain yogurt 

1 cucumber, peeled, seeded and chopped into 1/4-inch pieces

1 clove garlic, minced 

2 tablespoons freshly squeezed lemon juice 

2 tablespoons chopped fresh dill, plus extra for garnish 

1/2 teaspoon kosher salt, or to taste 

1/4 teaspoon freshly ground black pepper, or to taste 



3 Boneless Skinless chicken breasts cut into 1.5 in cubes

2T curry powder seasoning 

4T plain Greek yogurt 

Wooden skewers soaked in water 

Your favorite veggies (onions, peppers, tomatoes) cut into 1.5 in cubes 

Salt and Pepper to taste 

Pita bread  



1.Mix all ingredients in a bowl. 


1.Coat chicken in curry powder.

2.Coat chicken in yogurt.

3.Marinate for up to three hours.

4.Alternate putting veggies and chicken on skewers.

5.Grill directly over coals on grill grate. Rotating then until chicken is cooked through and desired char marks are achieved.

6.Plate and serve with Tzatziki and pita bread.
