Hog Night Smokers Pork Steaks
Ingredients
- 2 Prairie Fresh pork steaks, 1½ inches thick
- Allegro Hot and Spicy Marinade
- Heath Riles Cajun Creole Butter Seasoning
- Heath Riles Chicken Fried BBQ Sweet Grind Seasoning
- Heath Riles Sweet BBQ Sauce

- Charcoal smoker
- Instant-read thermometer
- Basting brush
Directions
1. Marinate the pork steaks
Place the pork steaks in a dish and coat with Allegro Hot and Spicy Marinade. Allow to marinate for 30 minutes per side, for a total of 1 hour.
2. Season
Remove the pork steaks from the marinade and generously season both sides with Heath Riles Cajun Creole Butter and Heath Riles Chicken Fried BBQ Sweet Grind. Let the seasoning set for 1 hour before cooking.
3. Prep the smoker
Fill your smoker with Royal Oak 100% All Natural Hardwood Briquettes and bring to your desired smoking temperature.
4. Smoke the pork steaks
Place the pork steaks on the smoker and cook until the internal temperature reaches 195°F (91°C).
5. Sauce and set
Remove the pork steaks from the smoker and brush generously with Heath Riles Sweet BBQ Sauce. Return to the smoker and allow the sauce to set for 15 minutes per side.
6. Rest and serve
Remove from the smoker and let the pork steaks rest for 10 minutes before serving.
