Butcher’s Premium Rub (or rub of your choice)
1. Trim meat and season each side of the meat.
2. Let sit on the counter to let rub adhere for 1 hour.
3. Heat smoker with Royal Oak Lump and your preferred smoke wood to 275-300 degrees. Cook on grates until 210 degrees.
4. Remove from grill and add Royal Oak Charcoal to bring smoker temp to 425 degrees. Sear flipping to each side twice.
5. Let rest at least 15 minutes.
6. Cut and serve.
