Leslie Scott’s Christmas Gingerbread Bread Pudding
Ingredients
Bread Pudding:
- 5 eggs
- 1 cup milk
- 1 cup brown sugar
- 1/2 cup molasses
- 1 tbsp cinnamon
- 3 tbsp ground ginger
- 2 loaves Vanilla Brioche
Glaze:
- 1 can sweetened condensed milk
- 1/2 cup molasses
- 1 tbsp ginger
- 1 tsp cinnamon
Equipment & Fuel
- Royal Oak® Lump Charcoal
- Royal Oak® Starter Squares
- Charcoal Grill
- Large Mixing Bowl
- Small Mixing Bowl
- Spatula
- Whisk
- Cake Pan
Directions
1. Mix the eggs, milk, and molasses together with a whisk or stand mixer.
2. Add in the brown sugar, cinnamon, and ground ginger. Mix well with a whisk or stand mixer.
3. Cut the bread into 1-inch cubes and place in grill grill-safe baking pan.
4. Pour the mixture over the bread.
5. Smoke at 350 degrees for 30 minutes.
6. Mix the ingredients for the glaze in a small mixing bowl.
7. Drizzle the glaze on top of the finished bread pudding. Enjoy!
