Rubs of choice (Coarse Salt and Pepper blend recommended. Add additional rubs to reach your desired flavor profile.)
1.Trim the fat off the top.
2.Season heavily with rub. A course salt and pepper blend is recommended. Add additional rubs to match your desired flavor profile.
3.Let the meat rest for an hour.
4.Smoke at 225 degree until internal temperature meats 125 degrees internal temperature or until desired doneness.
5.Let the prime rib rest for an hour.
