How To Reverse Sear Steak

  1. Remove steaks from the refrigerator and let them come up to room temperature. This will take about an hour. Season with salt, or your favorite rub, about 20 minutes before placing them on the grill.
  2. Prepare the grill for indirect and direct cooking by building a split fire. Preheat the grill to medium heat, around 225-250°F indirect and 400 to 450°F direct.
  3. Place the steaks on the grill grates over the indirect heat side of the grill.
  4. Cook the steaks until they reach an internal temperature of 10-15°F below your desired level of doneness, using a meat thermometer to check the temperature. Pro Tip: add wood chips (hickory or pecan) to the fire when cooking indirect to add some smoke flavor.
  5. Move steaks to the direct heat side of the grill and sear them for 1 to 2 minutes per side or until they develop a nice crust.
  6. Remove the steaks from the grill and let them rest for 5 to 10 minutes before serving.
