Malcom Reed’s Island Fire Wings

Ingredients

  • Duck Fat Spray
  • 4 lbs. Chicken Wings
  • Caribbean or Jerk Seasoning of Choice
  • Caribbean or Jerk Hot Sauce of Choice
  • 1/4 Cup of Honey
  • 2 Tbs of Butter

Equipment & Fuel

Directions

1. Air dry the wings for 30 to 40 minutes to remove moisture before cooking.

2. Spray wings with duck fat spray and coat liberally with rub of choice.

3. Cook wings (placing wings on the outside of the grill grate, leaving room in the center) and flip 20 minutes in. Cook for an additional 10 minutes.

4. Place a saucepan in the center of your grill and add butter, hot sauce, and honey.

5. Stir sauce constantly.

6. With tongs dip each wing into the bubbling sauce.

7. Remove from grill when internal temperature of 165 degrees.

8. Plate and drizzle the remaining sauce on the wings. Enjoy!
