Maque Choux


1 tablespoon Head Country Original seasoning or seasoning of choice

½ teaspoon Cayenne pepper

1-2 Tablespoons bacon grease or rendered pork fat

3 cups Corn

1 cup Okra, sliced

1 cup Red onion, diced

1 cup Red bell pepper diced

1 Jalapeno pepper, diced

1 Hatch chile, roasted and diced (optional)


1.Mix together the Head Country seasoning(or seasoning of choice) and cayenne pepper (Cajun seasonings) in a small bowl then set aside.

2.Heat a large skillet on medium heat with the pork fat. Stir in the onions, peppers and okra, and cook until they begin to caramelize; then add in the corn and Cajun seasonings. Cook until they soften up, stirring often, about 10 minutes.

3.Adjust seasoning to taste, then enjoy!
