Maque Choux


  • 1 tablespoon Head Country Original seasoning or seasoning of choice
  • ½ teaspoon Cayenne pepper
  • 1-2 Tablespoons bacon grease or rendered pork fat
  • 3 cups Corn
  • 1 cup Okra, sliced
  • 1 cup Red onion, diced
  • 1 cup Red bell pepper diced
  • 1 Jalapeno pepper, diced
  • 1 Hatch chile, roasted and diced (optional)

Equipment & Fuel


1. Mix together the Head Country seasoning (or seasoning of choice) and cayenne pepper (Cajun seasonings) in a small bowl then set aside.

2. Heat a large skillet on medium heat with the pork fat. Stir in the onions, peppers, and okra, and cook until they begin to caramelize; then add in the corn and Cajun seasonings. Cook until they soften up, stirring often, about 10 minutes.

3. Adjust seasoning to taste, then enjoy!
