Mike’s Hot Honey Pizza


1 package active dry yeast

1 teaspoon Mike’s Hot Honey

1 cup warm water

1 tablespoon kosher salt

2 Tbs Extra-virgin olive oil

3 cups 00 flour, plus more for dusting


1.Mix warm water, honey and 1 package active dry yeast in the bowl of a stand mixer and let stand for 5-10 minutes.  Yeast should bubble.

2.Turn the mixer on low and add the salt and olive oil.  Slowly add the flour and mix on low until flour is combined into dough.  Turn to medium and mix, scraping sides as needed, until a ball of dough forms.  You may need to add more water if the dough is dry or crumbly or more flour is the dough is sticky.  Add a little of these at a time until it forms a dough ball.

3.Turn dough onto a mat and knead a few times until elastic and smooth. Form into a ball and add to a lightly oiled bowl and cover.  Let dough rise, should double in size – about 1-2 hours.

4.Remove dough from bowl and place on a floured counter. Roll into a log and split into 3 and let rise for 10-15 minutes

5.Form the dough into a 12-inch circle, brush with olive oil and top with desired toppings.

Fig and Goat Cheese Pizza with Hot Honey Drizzle:

1.Use pizza dough recipe above.

2.Brush the dough with olive oil.

3.Crumble goat cheese into pieces and spread over pizza.

4.Slice dried figs in half, lengthwise. Spread evenly over pizza.

5.Grill at 500 degrees on pizza stone until dough is cooked.

6.Top with arugula and then add drizzle of Mike’s Hot Honey.
