Owen Quirk’s Double Smoked Ham with a Blackberry Glaze
				
				Ingredients
- 1 Bone-In Smoked Ham
 
BLACKBERRY HONEY WHISKEY HAM GLAZE
- 3/4 cup blackberry jam
 - 1/4 cup honey
 - 2 tbsp. dark brown sugar
 - 1/4 cup Dijon mustard
 - 1/3 cup whiskey
 - 1 tsp. ground fresh ginger
 - 1/4 tsp. ground clove
 - Juice of 1 lemon
 - Salt and pepper to taste

 - Thermapen
 - Aluminum Pan
 
Directions
1. Start smoker and run at 300°.
2. Place ham on rack in smoker and monitor the temperature until it reaches 120°.
3. While ham is cooking, add all Ham Glaze ingredients to a saucepan and simmer until slightly reduced.
4. Once ham is 120°, glaze ham. Return to smoker until ham reaches 145°
5. Remove, let rest, and serve.
