Leslie Scott’s Shrimp Spring Rolls
Ingredients
Spring Rolls:
- Shrimp
- Lettuce
- Herbs
- Strawberries
- Mango
- Cucumber
- Rice noodles
- Rice paper wrap
Ingredients
Peanut Sauce:
- 3 tomatoes chopped
- 2 tbsp Tom yum paste
- 1 can coconut milk
- 2 tbsp toasted and ground peanuts
- 2 tsp brown sugar
- 1 tsp lime juice
- 1 tsp soy sauce
Equipment & Fuel
- Royal Oak® Lump Charcoal
- Royal Oak® Tumbleweeds
- Charcoal Grill
- Cast Iron Skillet
- Metal Tongs
- Insulated Grill Gloves
- Cutting Board
Directions
Spring Rolls:
1. Place a cast iron skillet on a hot Royal Oak Lump charcoal fire.
2. Add a teaspoon of vegetable oil.
3. Season shrimp with salt, pepper, and dry rub.
4. Put into a hot skillet and cook until pink.
5. Allow the shrimp to cook.
6. Wet the rice paper wrap and pile on toppings of choice.
7. Roll up and dip in peanut sauce. Enjoy!
Peanut Sauce:
1. Mix together and allow to cook together for 15-20 minutes.
