Holiday Cornbread Dressing

Ingredients

     Cornbread:

  • 4 cups self-rising cornmeal
  • 2 eggs
  • 1/2 cup vegetable oil
  • 3 cups buttermilk

     Cornbread Dressing:

  • 1 pan cornbread
  • 12 Oz frozen season blend
  • 6 chicken thighs
  • 4 cups (reserved) chicken stock
  • Salt, pepper, sage

Directions

Cornbread:

1. Pour oil into the pan and heat.

2. Mix all ingredients together and add hot oil back to the mix.

3. Pour mixture back into pan and smoke at 400 degrees for 20 minutes. Enjoy!

Cornbread Dressing: 

1. Boil chicken thighs in water.

2. Crumble all cornbread into a bowl and add season blend.

3. Pull chicken and add to cornbread mixture.

4. Add salt, pepper, and sage to taste.

5. Add reserved liquid a little at a time until all are combined.

6. Pour loose mixture into a cast iron pan and smoke at 350 for 20-25 minutes. Enjoy!
