Leslie Scott’s Beef Pot Roast
Ingredients
3 lbs chuck roast
2 onions
3 cloves garlic
1 cup sherry
1 cup water
4 tbsp beef stock paste
1 jar banana pepper rings
9 red potatoes
1.5 cup carrots
Thyme
Rosemary
Directions
1.Salt and pepper then seat the roast and drop into Dutch oven with onions, garlic, sherry, water, paste, peppers and herbs.
2.After 1 hour add potatoes and carrots and leave in the grill capped for 30 minutes and uncapped for another 30 minutes.
3.Enjoy!
