Leslie Scott’s Grilled Cheese



  • 3 slices brioche
  • 1 egg, whisked
  • 2 tbsp. mayo
  • 4oz of Cheeses of your choice

(ghost pepper cheddar, chili cheddar,
apricot English cheese, Havarti)

      Beer Cheese:

  • 3 tbsp. butter
  • 3 tbsp. flour
  • 1/2 cup milk
  • 2 cups cheese of choice
  • 1 beer

Equipment & Fuel



1. Spread Mayo on all 3 slices of bread.

2. Soak 1 slice in egg.

3. Toast each piece of bread on both sides and add cheese to bread without egg. Use eggy bread for the center.

4. Top with beer cheese and toast with a torch.

Beer Cheese: 

1. Melt butter and add flour in a grill-safe pan.

2. Whisk in milk then beer.

3. Add cheese and allow to melt.

4. Whisk together until bubbling.
