Equipment & Fuel

Directions

  1. Heat smoker to 250 degrees.
  2. While the cheesecake is still frozen, turn over and cut bottom crumbles of the crust and save for later. Remove as much of the remaining crust as possible and place in a foil pan.
  3. Add pie filling around the cheesecake edges in a single thin layer.
  4. Place the pan in the smoker for one to two hours. The longer it goes the more intense the smoke flavor will be.
  5. Remove from the smoker and cover. Place in the refrigerator to cool down.
  6. While the filling is chilling dip your glass rim in caramel sauce and roll it in the crust crumbles.
  7. Once chilled, scrape the apples and cheesecake into a blender with ice and vodka. Blend and serve in rimmed glass of choice. Yields approximately 4 martinis, 12 shots, or 6 coup glasses.
  8. This is a great starting recipe. Amp up the flavors by adding things like brown sugar, cinnamon, or caramel sauce to the blender.
