Richard Fergola’s Pork Tacos

Ingredients

  • Cilantro
  • Tortillas
  • Pork Cheeks
  • Diced Onions
  • Duck Fat Spray
  • Cotija Cheese
  • Tomatillo Salsa
  • Premixed Slaw Mix
  • Fergolicious Red Hot Seasoning
  • Fresh Cut Pineapples (optional)
  • Fergolicious Smoke Show Seasoning

Equipment & Fuel

Directions

1.   Spray duck fat onto the front and back of the meat.

2. Liberally season with the new Fergolicious Smoke Show Seasoning for color.

3. Follow up the sweet rub with Fergolicious Red Hot Seasoning.

4. Cook over Royal Oak Pellets at 300 degrees for approx. an hour in a half.

5. Remove at 203-205 degrees, internal temp.

6. Heat tortillas up on the grill.

7. Cut meat into smaller, taco-sized pieces.

8. Place Pork Cheek onto grilled tortillas.

9. Add Diced Onion.

10. Add diced pineapple.

11. Pour Tomatillo sauce onto taco.

12. Add Cilantro.

13. Add Cotija Cheese.

14. Finish by topping with tomatillo salsa.

15. Enjoy!
